Mom’s Gazpacho
2 large tomatoes
1 large cucumber, peeled
1 med onion, peeled
1 med green pepper, quartered, seeded
1 jar pimiento, drained (several tablespoons)
2 12-oz cans of tomato juice (V8- she buys one big can)
1/3 cup olive oil
1/3 cup red wine vinegar
¼ teaspoon Tabasco
1 ½ teaspoon salt
1/8 teaspoon coarsely ground pepper
2 cloves garlic (she uses more)
½ cup croutons (mom never uses)
¼ cup chopped chives (mom never uses)
In blender, combine 1 tomato, ½ cucumber, ½ onion, ½ green pepper and pimiento and ½ cup tomato juice, and add some garlic
Blend for 30 seconds to puree veggies
Blend in olive oil, vinegar, Tabasco, salt and pepper, and as much V8 as possible
Pour into pitcher
Then add remaining V8 juice into pitcher
Could sauté croutons if you use…
Chop remaining veggies and serve in little bowl for people to help themselves.
